Meal time :: hobo dinners in a pan



HOBO DINNERS IN A PAN
2-4 servings | 10 minutes prep | 25 minutes cooking time


What you'll need:

2 Tbsp sunflower oil
2 very large russet potatoes (4 regular)
4 large carrots (peeled)
1/2-3/4 C. Water
1 lb. ground beef
1/2 yellow onion (chopped)
Salt & pepper

What you'll do:

1. Peel potatoes and slice them into thin round "chip-like" slices. Rinse potatoe slices in a strainer until water runs clear.

2. Heat the oil in a large frying pan over low heat. Add the potatoes and sprinkle with salt and pepper. Turn the heat up to medium heat and cover the pan with a lid or cookie sheet. Stir occasionally with a spatula.
(it'll take about 15-20 minutes until the potatoes are done, but do the other steps while they're cooking)

3. Chop the peeled carrots into round "chip-like" slices.

4. In a glass bowl add carrots and some water until the carrots are almost covered (about 1/2 cup).

5. Put the carrot dish in the microwave and cook until fork tender (about 1 to 2 minutes).

6. Add carrots and onions to the potatoes. Add more salt and pepper. Stir until coated. Cover and continue cooking until golden crispy brown and fork tender. (adjust temperature to cook evenly) While the vegetables are cooking, cook the ground beef in a separate pan until cooked thoroughly.
(if you're like me, you'll make your husband cook all red meat.. Yep I think it's nasty. I'm proud I'll even eat it now haha. So we buy Patties so they aren't bloody and it makes life so much easier)

7. Add the beef to the vegetables and mix it all together. Serve with bbq, ranch, or ketchup and a side salad. ENJOY!!
