Breaded Fish Tacos

Servings: 4 | prep time: 20 minutes | cooking time: 15 minutes | Ready in 35 minutes

What you'll need: 
3-4 tilapia fillets 
3/4 C Flour 
1 C bread crumbs (smashed croutons)
2-3 tbsp parmesan cheese 
2 eggs 
2 tbsp sunflower oil
10-12 corn tortillas 
Chopped lettuce 
Salsa or pico 
Shredded cheese
Sour cream 
Guacamole 
Lime

What you'll do:
1. Thaw the tilapia according to package directions or in a bowl of Luke warm water (still in the plastic).
2. Cut fillets into 1.5" strips. 
3. Separate flour, bread crumbs and eggs into 3 different dishes. Whisk eggs until mixed. 
4. Mix breadcrumbs and Parmesan cheese. 
5. Dip tilapia strips into the flour, then egg, then bread crumbs until all pieces are coated. 
6. Heat oil in a pan over medium heat.
7. Once the oil is hot, fry the fish. About 6 or 7 minutes each side, or until crispy. Put on paper towel-covered plate to drain excess oil. 
8. While the fish is frying, heat tortillas. 
9. Spread guacamole and sour cream on the warm tortillas top with the chicken and remaining toppings. Enjoy!!
