Meal Time :: Cajun Chicken Pasta


Cajun Chicken Pasta

Okay, so I got this recipe from Pinterest, but the link that it goes to is miserable and has tons of ads! That drives me nuts! So anyway, here is the recipe with my adaptations. Once again, no heavy cream. Whenever I buy heavy cream it goes bad or I don't use it, so I just use cream cheese and milk and it works great.



What you'll need (Cajun Chicken Pasta): 
Makes 3-4 Servings | About 20 minutes

16 oz. Penne Pasta, cooked
1 Tbsp. Olive Oil
3 Boneless Skinless Chicken Breasts, cut into small strips
1/2 C Butter
4 oz. cream cheese (cubed-melts best)
2 C milk
2 tsp. Cajun Seasoning (start with one teaspoon and then increase as desired) (recipe below!!)
3 Tbsp. grated parmesan cheese
2 Tbsp. shredded colby jack cheese
Salt & Pepper, to taste
2 Roma Tomatoes (diced)
4 Green Onions (chopped)
a little bit of parsley (everything looks better with parsley!) (even parsley flakes will work!)


What you'll need (Cajun Seasoning):
Makes 1/4 Cup of Seasoning

2 tsp. salt
2 tsp. garlic powder
2 1/2 tsp. paprika
1 tsp. ground black pepper
1 tsp. onion powder
1 tsp. cayenne pepper
1 1/4 tsp. dried oregano
1 1/4 tsp. dried thyme
1/2 tsp. red pepper flakes




What you'll do:

Seasoning: Combine all spices and stir together until well blended. Store in an air tight container.

Heat oil in a non-stick frying pan over medium heat. Add chicken and cook thoroughly flipping pieces over occasionally to cook both sides. (Or grill on a Foreman grill.)


Melt butter in a separate medium, non-stick saucepan over medium heat. (Do this while cooking the chicken.) Add cream cheese stirring with wire whisk until smooth. Add milk, a little at a time, (you may not need the full 2 cups) whisking to smooth out lumps. Add cajun seasoning. Stir in Parmesan & Colby Jack cheese and salt & pepper until has a good flavor. Remove from heat when sauce reaches desired consistency. Add parsley. Stir. Sauce will thicken rapidly, thin with milk if cooked too long. Toss with hot pasta and chicken to serve. Top with diced tomatoes, green onions and extra parmesan cheese. ENJOY!!
