Easy Chicken Parmesan

Parmesan Chicken 
Makes 4 Servings | 15 minutes prep time | 25 minutes baking time

What you'll need:

  • 4 boneless chicken breasts, pounded to 1/2 inch thickness
  • 1 egg
  • 1/2 cup milk
  • seasoned bread crumbs or croutons
  • salt & pepper
  • 2 to 3 tablespoons olive oil
  • 8 slices monterey (or mozzarella) cheese
  • 1 jar spaghetti sauce
  • Parmesan cheese

What you'll do:

Whisk together the egg and milk.  Using a food processor, empty the bag of croutons and blend until crushed. Then mix the bread crumbs with a little parmesan cheese and salt & pepper in a dish. Dip the chicken breasts in milk and egg mixture and then in bread crumbs mixture. Heat olive oil in a large skillet over medium-high heat. Brown the chicken in the hot oil on both sides until golden, about 3 to 4 minutes on each side. Set chicken in a baking dish.
Slice 8 pieces of cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over the top of the chicken. (We are not huge tomato sauce people, so you are welcome to put more sauce than I did.) Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly. Serve with seasoned linguine, garlic bread and a nice green salad.

  2. HAHA! Hey only TWO more months!! weird! I added one more just for you! haha. I have all of the pics and everything, i just don't have time to blog! Life is soo busy and I can't believe how fast the Senior Exhibition is coming up!
