Week 36 :: Meal Time -- Chicken Bacon Panini

Chicken Bacon Panini

What you will need //  (for 2 servings)
1 large chicken breast (filleted)
McCormick montreal chicken seasoning
3-4 strips of Bacon
half of 1 large green pepper (sliced length wise)

Sliced Bread or large flat rolls
butter (about 1 Tbsp)

2 slices of provolone cheese
(frying pan, griddle)

What you will do:
Lightly season the chicken with the seasoning. Grill the chicken in a frying pan or on a george foreman grill until cooked all the way through. While the chicken is cooking, start the bacon. Place the bacon in a frying pan and cook until it is browned. While the meat is cooking slice the pepper into small strips. Set aside. Heat griddle to about 350 degrees. When the chicken and bacon are done cooking, cut the chicken into strips or shred the chicken. Break the bacon into strips as well. Butter 1 side of each slice of bread. Place buttered side of bread down onto the heated griddle. Place a slice of cheese on top of the bread. Top with the chicken and strips of bacon. Add the peppers. (If you love cheese you can add another slice of cheese. It also hold it together.) Finish by topping with the other slice of bread. Flip sandwich until cheese is melted and both sides of the sandwich are golden brown. Serve with a side like pasta salad. Enjoy!!
