Week 24 :: Meal Time -- Christmas Dinner for Two

Meal Time:

So, since we went to my parent's house for Christmas this year, we wanted to have a mini Christmas with just the two of us. So we made a typical but small Christmas Eve dinner for two! So we made dinner and then we went to bed early and woke up the next morning at 4am and we did stockings for each other with just a couple things. It was so much fun!


Debra's Yummy Potatoes (Funeral Potatoes)

Ingredients:
7 to 10 Potatoes (grated) OR 1 large bag frozen hash browns
1/2 C (1 Cube) Butter
1 can cream of chicken soup
1 pint sour cream
1 1/2 C shredded cheddar cheese
3 to 4 green onions (minced) or dried onion flakes

2 Tbsp. Butter (melted) additional
1/2 C crushed cornflakes

Directions:
Preheat oven to 350 degrees.
Cook potatoes until tender. Grate potatoes and put into a 9X13 inch pan. In a small saucepan heat the soup on low heat. Add butter and stir into soup until completely melted. Stir in sour cream and cheese. Continue stirring until cheese is melted. Pour mixture over the potatoes. Add the onions and mix well. Add additional cheese if desired.
Crush cornflakes in a baggie with a rolling pin or with hands. Add cornflakes to the 2 tablespoons of melted butter. Sprinkle on top of potatoes. Bake at 350 for 45 minutes.

Makes about 10 servings. ENJOY!!
