Week 23 :: Meal Time -- Hawaiian Haystacks

Meal Time:

Okay this was always a favorite growing up and it's easy and fairly inexpensive!

Hawaiian Haystacks

Ingredients:
1 1/2 C Rice (Botan Calrose Japanese Rice is our favorite!)
1 C Shredded chicken (cooked)
1 Pckg Chicken Gravy Mix (Or you can make your own)

The amount of following ingredients are to be used depending on how much you like the ingredient!
Shredded Cheese
La Choy Dried Chow Mein Noodles
Almonds
Olives (diced)
Pineapple Chunks
Peppers (diced)
Tomatoes (diced)
Shredded Coconut

Directions:
Cook the rice according to the directions. Generally 1 1/2 cups rice to 2 cups water. Bring to a boil in a saucepan. Once it comes to a boil, reduce heat to low and cook for about 20 minutes. (Or if you make rice a lot, I would invest in a rice cooker. They are the bomb! The rice gets cooked perfectly every single time!) While the rice is cooking cook the chicken. Season if desired. When these both have about 5 minutes of cooking left, begin making the chicken gravy according to the package. Or if you like to make it from scratch, this recipe is easy and delicious (and with the right chicken stock, can be gluten free).

After the chicken is fully cooked, shred chicken into the gravy, reheat if needed.

Serve all ingredients over the rice. Enjoy!
