Meal Time:
Okay I don't know about you, but I seriously hate moving food from one house to another...so I haven't been grocery shopping in like 3 weeks besides getting milk, eggs, cheese, bread...the essentials. So from what we could scrounge up here are the meals we threw together:
Cheesy Chicken Nachos, Pizza and salad, home made mac and cheese.
Cheesy Chicken Nachos
Tortilla chips
1/2 Chicken breast (shredded)
1/4 Cup Canned corn
1/3 Cup Black beans (more or less as desired)
Cheese. The amount depends on how much you like cheese.
I like cheese a lot. Three cups. haha. (i love my husband)
2-3 Tbsp. Salsa
Dollop of Sour cream (not pictured)
Spoonful of Guacamole (not pictured)
Lettuce (optional-we were out so it was a no go)
Spread chips over a plate. Place chicken and canned items on the chips. Cover with cheese. Microwave until cheese is melted. Add remaining cold ingredients. Enjoy!
Frozen Pizza and Salad
(hey I never said that I am a chef, I just said I would give meal suggestions haha. I think it's okay to take some nights off from cooking!)
1 Frozen Pizza
1 bag of lettuce
salad toppings
suggested topping: dressing, wonton strips, dried cranberries, croutons, carrots, almonds, cabbage etc.)
Homemade Macaroni and Cheese
2 Cups pasta (elbow macaroni or shells or any type really)
12 oz (3/4 lb.) Velveeta Pasteurized Cheese (cut into half inch cubes)
1/3 Cup Milk
1/8 Tsp. pepper
Cook pasta in a large saucepan as directed on package; drain well. Return to pan. Add in remaining ingredients; cook on low heat until Velveeta cheese is completely melted and mixture is well blended. Stirring frequently. Makes 4 one cup servings.
Serve with garlic bread and a vegetable. (yes served on paper plates! Moving is such a drag. haha)
