Week 14 :: Meal Time -- Mozzarella Chicken and Baked Potatoes

Meal Time:

This week we made baked potatoes and stuffed mozzarella chicken.

Perfect Baked Potatoes:
4 Medium to Large potatoes (washed)
Unsalted Butter (or olive oil)
Cheese
Sour cream
Chives
Bacon bits
Salt & pepper

Preheat oven to 375 degrees. Melt about 2-3 Tbsp. of butter in a microwave safe dish. Using a basting brush, spread the melted butter (or oil) on the skins of the potatoes. Sprinkle with salt. Place in oven on a baking sheet (I cover my pan with foil for easy clean up). Bake the potatoes for 1 hour. Remove from oven and slit the potato and fill with butter, cheese, chives, bacon, sour cream and salt and pepper.

Mozzarella Stuffed Chicken:
4 Boneless Chicken breasts
Seasoning
1 cup Mozzarella Cheese
1 lb button mushrooms (sauteed) (recipe below - or you can look up the texas roadhouse recipe-delicious!!)

Filet chicken breast and grill with seasoning until almost done. Add mozzarella cheese on one of the sides of the filleted chicken and place the other half of the chicken on top until the cheese melts. Add mushrooms and cheese to the top of the chicken while still hot. Enjoy!!

Pat's Sauteed Mushrooms
2 Tbsp butter
1/2 Tbsp olive oil
1/2 Tbsp balsamic vinegar
1 clove garlic (minced)
1/8 tsp dried oregano
1 lb button mushrooms (sliced)
Melt butter with oil in a large skillet over medium heat. Stir in balsamic vinegar, garlic, oregano and mushrooms. Saute for 20-30 minutes, or until tender.
