Texano Burrito



Texano Burrito more effort (for the quick and easy version keep on keepin' on and scroll down a bit)

4 servings | 15 minutes Prep Time | 4-8 hours Crock Pot Time | 40 minutes cooking time


What you'll need:
1 lb boneless, skinless chicken breasts
2 c salsa
2 Tbsp olive oil
4 medium potatoes, washed and chopped into 1/2" piece* 
1 tsp seasoned salt
1/4 tsp pepper
3/4 c sour cream
1 c shredded cheese
4 large flour tortillas or wraps

What you'll do:
1.  Place chicken breasts in a slow cooker; cover with salsa and cook on low heat for 6 to 8 hours or high heat 4 hours.

2. Shred cooked chicken and keep warm.

3. Heat oil in large skillet, between medium to medium-high heat. Add chopped potatoes, coat in oil, and season with salt and pepper. Once one of the larger potato cubes are fork tender turn heat to low and cover to keep warm—about 30 minutes, depending on the stove.

2. Heat tortillas on a griddle until warm or in microwave for about 30 seconds or until warm. Spoon 1/4 of the chicken, 1/4 of the fried potatoes, 1/4 c cheese, and 3 Tbsp sour cream on each; fold. If desired, heat the burritos in microwave to meld flavors, about 2 minute, or heat in 350 degree oven until heated through, 20-30 minutes.

* Previously baked potatoes work the best and cook the fastest. OR you could bake a two-pound bag of frozen seasoned breakfast potatoes and omit the salt and pepper seasoning.



Texano Burrito QUICK AND EASY 

4 servings | 10 minutes Prep Time | 25 minutes cooking time

What you'll need:
1 lb boneless, skinless chicken breasts
1 bag of tater tots
seasoned salt
black pepper
2 c salsa
3/4 c sour cream
1 c shredded cheese
4 large flour tortillas or wraps

What you'll do:
1. Preheat the oven and cook tater tots according to the directions on the bag. 

2. When the tots have about 15 minutes left to bake, season the chicken with salt and pepper and grill it until cooked thoroughly. 

3. Remove the chicken from the grill and shred with two forks. 

4. Mix the salsa and sour cream in a dish. Set aside. 

5. Remove the tater tots from the oven and sprinkle with pepper, if desired. 

6. Heat tortillas on a griddle until warm or in microwave for about 30 seconds or until warm. Spoon 1/4 of the chicken, 1/4 of the tater tops, 1/4 c cheese, and 1/4 of the salsa-sour cream mixture on each; fold. If desired, heat the burritos in microwave to meld flavors, about 2 minute, or heat in 350 degree oven until heated through.
