If you haven't noticed, I'm not really one for ground beef I am more for chicken. So switch up your regular taco soup and make dun dun dun...
Chicken Taco Soup:
Servings: 4
What you'll need:
Shredded Chicken (cooked) (I cook mine in the crockpot)
1 Can Black Beans (undrained 15 oz)
1 Can Kidney Beans (undrained 15 oz)
3/4 C Salsa (or you can use a can of diced tomatoes 14.5 oz)
1 Can Corn (undrained 15 oz)
1/2 C Chicken Broth or Water
1/2 Onion (chopped)
1 pckg Taco Seasoning (I use half a package because I don't like when it's overpowering taco tasting)
Shredded Cheese [optional]
Sour Cream [optional]
What you'll do:
Pour chicken, beans, salsa, corn, onion, water (or broth) into a large pot. Over medium heat stir all ingredients together. Slowly add the taco seasoning to the mixture. Warm the mixture. Add cheese to the mixture and stir together until melted. Heat the soup thoroughly. Serve in bowls topped with extra cheese and sour cream. Enjoy!!
