Week 20 :: Meal Time -- Parmesan Potatoes

Roasted Parmesan Potatoes: 

2 Potatoes (scrubbed clean)
1.5 Tbsp Olive oil
Grated parmesan cheese
1 Tbsp shredded colby jack cheese
garlic powder
other seasonings to personal preference (ex. salad supreme, parsley, salt, pepper etc.)

Cut potatoes length wise, and then cut the potato into cubed bits but do not break the skin. Brush oil over the potatoes and sprinkle with parmesan cheese, and seasonings. Bake potatoes at 375 degrees for 50 minutes. Remove from oven and sprinkle shredded colby jack cheese on top and put back in the oven for 10 minutes. Remove and serve with a side of sour cream or homemade ranch dip. We ate bacon covered pork chops with these roasted potatoes. Enjoy!
