Week 17 :: meal time -- Chicken Broccoli Bake

Meal Time:

Chicken Broccoli Bake
1 1/2 C Rice
2 C Water

1 C Water 
1 Chicken bouillon cube
1/4 onion minced 
8 oz. frozen chopped broccoli
1 can cream of chicken soup (or you can substitute the water for another can of cream of chicken soup! That's what I did the last time I made it, and it was a little better.)
1 Tbsp. butter
1 C cooked cubed chicken
1 C grated cheese
3 Tbsp dry bread crumbs

In a sauce pan (or rice cooker) combine rice and water bring to boil on high heat. Reduce heat and cover. Simmer 18-20 minutes. After cooked spread on bottom of casserole dish. 

Preheat oven to 350 degrees. In a large sauce pan combine onion, bouillon cube and water. Partially cook about 6-8 minutes. Add broccoli and continue cooking until fork tender. Remove from heat and partially drain. In another pan Combine cream of chicken soup and butter. Heat until butter is melted. Don't overcook. In the casserole dish with the rice layer rice on the bottom, add broccoli and chicken chunks, top with cream of chicken sauce. Sprinkle grated chicken and bread crumbs. Bake uncovered at 350 degrees for 30 minutes. Cool and Enjoy!!

Attempt #2 SOO GOOD! 
(Buy broccoli that can steam in the bag..WAY easier)
