Week 12 :: Meal Time -- Beef and Barley Stew and Pancake Sausage


Meal Time:

This week we made Beef and Barley Stew-delicious! (Thanks Maggie, Eva, Steven and Michelle), Sunday Roast, and Pancake dipped Sausages (probably not the healthiest...okay definitely not healthy at all. haha. Only eat these every...other year. haha). 


Melanie's Beef and Barley Stew
Servings: 6

What you'll need:
  • 2 pounds beef stew meat, diced into 1 inch pieces
  • salt and pepper to taste
  • 4 tablespoons vegetable oil
  • 1 cup chopped onion
  • 1 cup sliced carrots
  • 1/2 cup fresh sliced mushrooms
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon dried thyme
  • 1 (14.5 ounce) can chicken broth
  • 3 cups water
  • 1 (16 ounce) package frozen mixed vegetables
  • 4 small red potatoes, cut into chunks
  • 1/2 cup barley
What you'll do:
  1. Season beef stew chunks with salt and pepper to taste. Place seasoned beef in a large soup pot. Add 2 tablespoons of oil and saute for 5 minutes on high heat. Remove meat. Add 2 more tablespoons of oil to pot and add onions, carrots and mushrooms. Saute for 5 minutes, stirring often. Add garlic and thyme to pot and saute for 3 more minutes.
  2. Add the chicken broth and 3 cups of water to pot. Add the frozen mixed vegetables, potatoes and barley. Season with salt and pepper to taste. Stir all together and bring to a boil. Cover pot, reduce heat to low and simmer for 1 to 1 1/2 hours. Enjoy! 





Sunday Roast
I love the crockpot! haha. Okay well, my husband does...he cooks in the crockpot more than I do. He's a great cook! 

1 chuck roast
2 cups baby carrots
3 potatoes
seasoning to taste

Cut up potatoes and season roast. Add 1/2 cup water to the crockpot and add in all ingredients. And the crockpot does all of the work. Set it on low for 8 hours. Serve with dinner rolls. Enjoy!





Pancake Dipped Sausages
pancake batter (we used a Krusteaz blueberry mix)
1 package 12 sausages

Make up the pancake batter according to the directions. Cook the sausages in a frying pan. Skewer the sausages and dip them in the batter. Deep fry for about 2 minutes. We did it longer at first and they were super crispy and very greasy and not very pancake batter-like. So cooking them for less time they actually seemed more like pancake instead of deep fried grease. Serve with pancakes and eggs. Enjoy!
